It's the most wonderful time of the year: peach season. This fruity concoction—courtesy of Lonny's favorite cocktail maven and the Jewels of New York founder, Diana Yen, combines the summer's best flavors, including sweet crushed peaches and fresh mint leaves, plus a little vodka and elderflower. Try it on a sweltering day—your taste buds will thank you.
Minty Peach Crush
- ½ large peach, sliced
- 6 mint leaves, plus more for garnish
- ½ ounce fresh lemon juice
- 1 ½ ounces vodka
- 1 ounce elderflower cordial
In a tall glass, muddle the peach with the mint leaves and lemon juice. Mix in the vodka and elderflower cordial. Add ice cubes and top with club soda. Garnish with mint.
