Grilled Cheese with Tallegio, Radicchio, and AppleMakes 1 sandwichWaxing nostalgic? This is the perfect comfort food to pair with an afternoon of journaling. So get cozy, creative, and inspired—this grilled delight will stave off the hunger.
-- 2 slices walnut bread
-- 2 slices tallegio cheese
-- 3 thin slices Fuji apple
-- 2 radicchio leaves
-- 1 tablespoon mayonnaise
Form sandwich by layering the cheese, apple, and radicchio between bread. Spread half the mayonnaise on top of sandwich. In a medium skillet over medium heat, cook sandwich, mayonnaise side down, for about 5 minutes; meanwhile, spread the remaining mayonnaise on top of the bread. When cheese begins to melt and bread is golden brown, flip the sandwich. Cook another 5 minutes and serve.
