Looking for a no-cook Super Bowl snack you can set and forget? (And we're not talking about French onion dip.) These pimento cheese crostini are just the ticket. "These are really packed with flavor," says Marissa Lippert, owner of Nourish Kitchen + Table in New York City, who created the ideal finger food for our Lonny-approved Super Bowl party. "Even if you don't know what it is, you're hooked once you taste them."
Pimento Cheese Crostini
Makes about 1 pint (serves 6–8)
-- 6 ounces cheddar cheese, softened
-- 1 cup canned pimentos
-- dash of cayenne pepper
-- ⅓ cup olive oil or canola oil-based mayonnaise
-- ½ cup plain yogurt
-- 1 garlic clove smashed
-- juice of 1 lemon
-- 1 tablespoon Worcestershire sauce
-- 1 chile de árbol or a pinch of red pepper flakes
--3 tablespoons chives, minced
-- salt and pepper to taste
-- crusty bread of your choice
Preheat oven to 350˚ and arrange sliced bread in single layers on a baking sheet. Bake until golden, about 15 minutes; allow to cool. Blend all the remaining ingredients except the chives in a food processor until smooth but slightly chunky. Fold in chives. Spread over bread, garnish each toast with chives and a slice of pimento, and serve.
