You know how it goes. You show up to a Halloween shindig, ready to party, and you're greeted with a cloyingly sweet punch or candy corn-inspired cocktail that's bound to leave you feeling like a zombie the next morning. We know how you feel. So we teamed up with Jewels of New York founder Diana Yen to bring you this ridiculously easy lychee martini, a festive potable that's worthy of adult palates but still fun enough to satisfy your inner trick-or-treater. The secret ingredient? A pair of creepy yet delicious "eyeballs" made by placing blueberries inside of lychees. Because, you know, eye of newt isn't really our thing. Try it over the next week and tell us how it goes in the comments below. Happy Halloween!
Lychee Eyeball Martini
Serves 1
- 3 ounces vodka
- 2 ounce syrup from lychee can
- 1 splash white vermouth (clear)
- ice
- lychee eyeballs (recipe follows)
Mix the vodka, lychee syrup, and vermouth in a cocktail shaker half-filled with
ice. Shake well. Pour strained martini into martini glass and garnish with lychee eyeballs.
Lychee eyeball garnish
- 1 20-ounce can whole lychees in heavy syrup
- 1 pint blueberries
Insert 1 or 2 blueberries (depending on their size) into the cavity of each lychee. Place on a baking sheet and keep covered in the refrigerator until ready to serve. To make the garnish, skewer two lychees onto a pick and serve alongside cocktail.
