What could possibly make the anticipation of Christmas morning even more enticing? One word: breakfast. At least that's the case in my family, all the members of which are known to plan what's for dinner before even getting out of bed. So I asked Lonny's favorite chef, Diana Yen, to come up with a daybreak meal that's worthy of all the festivities. Of course she didn't disappoint. Her Dutch baby pancakes with spiced apples are just the thing to keep you satisfied during a long bout of present opening—or perhaps an evening dedicated to last-minute gift wrapping.

Dutch Baby Pancakes with Spiced Apples
Serves 2

For the Dutch Babies
2 eggs
½ cup milk
½ cup sifted all-purpose flour
1 pinch ground nutmeg
1 pinch salt
2 tablespoons butter
confectioners' sugar for dusting

Place a 10-inch cast iron skillet inside oven and preheat to 475 degrees.

In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, nutmeg and salt.

Remove skillet from oven and reduce heat to 425 degrees F. Melt butter in hot skillet so that inside of skillet is completely coated with butter. Pour all the batter in the skillet and return skillet to oven. Bake until puffed and lightly browned, about 12 minutes. Remove promptly and sprinkle with powdered sugar.

For the Spiced Apples
2 tablespoons butter
2 large apples, peeled, cored, and sliced ¼-inch thick
¼ cup cold apple cider
¼ cup brown sugar
¼ teaspoon ground cinnamon

In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes. Add apple cider, then stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm with Dutch babies.
